Ingredients
4-5 cups Sliced apples
1 cup Old fashioned rolled oats
½ cup flour
½ cup ghee (or coconut oil)
2 tsp cinnamon (divided)
1 tsp nutmeg
2 tsp vanilla extract
½ cup Coconut sugar (or brown sugar)
2Tbs lemon juice
Directions
Line a baking dish with parchment paper (8 inch square dish works well).
Slice apples or pears about ⅓ inch thick, can mix with cranberries, blueberries or other fruit for total of 5 cups.
Toss with lemon juice
Sprinkle with nutmeg and 1 tsp of the cinnamon
Pour mixture into the baking dish.
In a separate bowl, mix oats, cinnamon, coconut sugar or brown sugar, melted ghee or coconut oil, almond or vanilla flavoring, and flour. Toss and mix with spatula or hands until oats are coated.
Sprinkle over the apple mixture
Cover with foil for the first 30 minutes to steam and soften apples. May require 45 minutes if apple slices are thicker or firmer texture - test with a toothpick or fork to make sure apples are tender before baking without foil.
When apples are tender, remove the foil to lightly brown the oats.
