A filling and delicious vegan scramble that goes with waffles, toast and more.

Ingredients
2 eggs or ½ cup soft tofu or vegan eggs.
1 tsp Golden Turmeric Ghee or Coconut oil
Pinch each sea salt and fresh ground black pepper
Toppings such as cheese (dairy or vegan), thinly sliced scallions, chopped tomatoes.
Directions
Heat the pan, melt 1 tsp ghee or coconut oil and brush or swirl to coat the pan.
If using coconut oil, keep at saute or low/medium heat to avoid smoking.
Add beaten egg or smashed tofu,with a sprinkle of sea salt and fresh ground pepper - and stir to soft scramble. If using tofu, allow to heat through and slightly brown if desired. If using eggs, cook at higher temperature for less time and remove when soft-scrambled.
