Saag Aloo is a classic Indian dish made with fresh spinach and potatoes along with touch of spice with the green chillies and antioxidant turmeric.
Ingredients

1 tbsp ghee or coconut oil
1 large onion, finely chopped
4 cloves garlic, finely chopped (if using garlic ghee can reduce or skip this step)
1-3 finely chopped chillies
1 tbsp chopped or grated fresh ginger
1 tbsp turmeric
1 lb potatoes (2-3 large or 5-6 baby potatoes)
1 tbsp red chili powder (adjust per taste)
2 lb spinach leaves washed and chopped.
Directions
Heat ghee in pan. When pan is hot, add the onion, garlic, chili and ginger. Stir fry a few minutes until softened but not browned.
Stir in turmeric and cook for 5 minutes. Add potatoes and red chili powder. Cover and cook 15-20 minutes over medium heat, until potatoes are tender.
Stir in the spinach, cover and cook until leaves have wilted and water is absorbed leaving a dry mixture.
